Walnut Brownies

  • 6 oz semisweet chocolate
  • 1/2 cup hot water
  • 4 egg whites
  • 1 tsp vanilla extract
  • 2/3 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup chopped walnuts

Preheat the oven to 350°F. Spray an 8" x 8" cake pan with nonstick cooking spray. Set a large, heatproof bowl over simmering water. Add chocolate to bowl and pour in hot water. Stir until chocolate is melted and smooth. Remove from heat and let cool slightly. Whisk in egg whites then mix in vanilla. In a separate bowl, mix together sugar, flour and baking powder. Stir dry mixture into chocolate batter until just combined. Stir in walnuts. Pour batter into prepared cake pan. Bake 20 to 30 minutes or until the edges pull away from the pan. Let cool on a rack before serving.

recipe notes

Use whole-wheat flour or at least 1/2 whole-wheat for the white flour. Also, think about using 1/2 cup unsweetened cocoa powder in place of the melted chocolate, if desired, 1/4 cup chocolate chips could be added with the walnuts.
