Pumpkin Pear Waffles

These spicy waffles make a great fall or winter breakfast.

Yield: 6 Servings
Serving Size: 1/2 waffle

ingredients

  • 1 cup whole-wheat pastry flour
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 ea eggs, beaten
  • 2 tbsps brown sugar
  • 1/2 cup pumpkin puree
  • 1/4 cup finely diced pear
  • Nonstick cooking spray

directions

1. Mix together the flour, baking powder, cinnamon and nutmeg.

2. Beat together the eggs and sugar. Add in the flour mixture. Fold in the pumkin and pear.

3. Pour batter into a hot waffle iron coated with nonstick cooking spray. Cook until waffles are crisp and brown. The batter will make three waffles.

Try serving with sliced bananas, apples, or other fruit, a dollop of low-fat plain yogurt and/or a measured 1-2 tbsp. pure maple syrup to keep sugar low.
