Baked Trout

Serving Size: 1 Fillet

ingredients

  • 2 lbs. trout fillet, cut into 6 pieces
  • 3 tbsps lime juice (about 2 limes)
  • 1 medium tomato, chopped
  • 1/2 medium onion, chopped
  • 3 tbsps cilantro, chopped
  • 1/2 tsp olive oil
  • Salt, black pepper and red pepper as desired (1/4 tsp each)

Preheat oven to 350 degrees. Rinse fish and pat dry then place in baking dish. In a separate bowl, mix ingredients together. Pour mixture over fish. Bake 15-20 minutes or until fork tender.
