Autumn Apple Turkey Panini

A medium apple is about 90 calories and a good source of fiber, vitamin C and phytonutrients. With countless varieties available, the common apple provides unique flavor for every tastebud. This fruit adds sweetness to savory dishes, fiber to baked goods and is a perfect pick for an on-the-go snack.

  • 1 tsp Dijon mustard
  • 1 tbsp plain, low-fat yogurt
  • 2 slices 100% whole-wheat bread
  • 1 apple, thinly sliced
  • 2oz lean turkey breast sliced thin (low sodium if deli meat)
  • 1 small handful fresh spinach or arugula leaves
  • 1/2-1oz reduced-fat cheese (try goat cheese, cheddar, Jarlsburg, Swiss or havarti)

1. Mix mustard and yogurt and spread onto bread. Top one slice of bread with 1-2 slice apple, turkey, spinach leaves, and cheese. Place the other bread slice on top.

2. If you have a panini maker, place the sandwich on the hot plate and cook as suggested. Or use an indoor electric grill. From stovetop, spray a skillet or grillpan with cooking spray and heat over medium. Add the sandwich, place a small skillet on top of the sandwich and place a heabvy object (2 cans) in the top skillet to press down. Cook for approximately 2 minutes, reduce heat to medium-low, flip sandwich and replace top skillet and cans and cook about 1-2 minutes more until browned on both sides.

3. Serve sandwich with remaining apple slices and a mixed green salad or lsiced celery, carrots and cucumbers.

Leave out the turkey and cheese and replace it with 1/4 of a sliced avacado and 2 tbsp hummus; add apple slices to the classic PB&J with 1 tbsp nut butter and 1 tbsp no-added-sugar jam. Add chopped apples to salads, cabbage slaws or pureed soups like butternut squash. Use shredded apple in healthy recipes for whole-wheat breads and muffins. Mix chopped apples into hot oatmeal or plain, low-fat yogurt with cinnamon for breakfast. Microwave a chopped apple until softened, top with cinnamon, pumpkin pie spice and 1/2 cup of low-fat whipped topping for an occasional sweet treat.
